Aside from being a popular sauce for pasta, Marinara sauce is also a good dipping sauce for mozzarella cheese sticks and soft breads.

This sauce got its name from its inventors: the cooks aboard Napolitan ships (these ships come from the city of Naples or Napoli). Some say that “Marinara” came from the Italian word for sea, “Marinaro”.

How to Make Sinamak

Sinamak is Iloilo’s version of spiced vinegar. This condiment derives its appeal and zest from several spices that were combined and soaked in vinegar for several days to several weeks.

This spiced vinegar is a good condiment for grilled and fried foods. Chicken Inasal, one of Iloilo’s famous chicken dishes, is best eaten with Sinamak. Some dishes in our recipe roster can be more enjoyed if eaten with this spiced vinegar too. Here are a few of them:
Pritong Bangus, Pritong Tilapia, Inihaw na Liempo, Grilled Isaw, Pinoy Fried Chicken, Ukoy, Lechon Kawali, Tokwa’t Baboy, Chicharon Bituka, and Inihaw na Pusit.

Asian Dipping Sauce Recipe

A dipping sauce is a common condiment that is used to add and enhance the flavor of a dish. In the Philippines, Toyomansi (soy sauce and calamondin) and Patismansi (fish sauce and calamondin) are among the favorite dipping sauces for fried and grilled foods.

There are preferred dipping sauces per food category in each Asian country; however, there is one dip that can be considered as the most common and widely used: the basic Asian dipping sauce.

Basic Asian Dipping Sauce is a simple dip that is made from soy sauce, vinegar, and sesame oil. Since Asians like some heat in their food, chilies are sometimes added to it.
This oriental tasting dip is perfect for steamed or fried dimsum; you may also use this in grilled meat, seafood, and vegetables.

KFC Style Gravy Recipe

Positive feedbacks keep coming-in as a result of the different fried chicken recipes that we featured to date. Along with it are requests for a good gravy recipe to compliment the fried chicken. There isn’t any good gravy recipe that I can think of other than KFC’s so I tried whipping-up some ingredients to arrive at the closest copycat recipe (in my opinion) using basic ingredients that should be available in your local supermarket.

While trying to browse the internet on this topic, I discovered several KFC gravy recipes that claim to be the closest. Though it might be true, these recipes require the use of canned beef gravy plus many other ingredients which I think is not practical at all. I find it unreasonable to use ready mix or canned gravy to arrive at another gravy variation, don’t you? Saving money is also an important factor; if there is a recipe that will cost less and still give me the taste that I’m looking for – why wouldn’t I go for it?

This gravy recipe that we have here works well with fried chicken and mashed potatoes. If you are one of those who think that gravy is some kind of soup, slurping this or mixing it with rice will work too.

Lechon Sauce Recipe

I was able to take some Lechon leftovers from the birthday party that we’ve been to last night and I plan to make some Lechon Paksiw out of it. The most important ingredient in making Lechon Paksiw other than the Lechon itself or the Lechon kawali is the Lechon Sauce (which is also called Sarsa ng Lechon).

I can easily get some commercialized bottled Lechon sauce from the Asian grocery but I thought that I can save some money if I just make it myself.

Making Lechon sauce is not as complicated as most of you might be thinking. With the complete ingredients and proper kitchen equipment on hand, you will find this procedure to be a piece of cake.

Sweet and Sour Sauce is a sauce made by combing a sweet component and a sour component with cornstarch as the thickening agent. Some of the common sweet components are brown sugar, granulated white sugar, and honey. Rice vinegar, white vinegar, apple-cider vinegar, and pineapple juice are some of the common ingredients used as sour component.

This sweet and sour recipe will give you a good sauce with the right balance of flavors.
