Tortang Talong Recipe

Beating an egg can make for a great ingredient in several recipes around the world. From baked goods to classic omelettes, it is endlessly versatile, and goes with both sweet and savory dishes. But who knew that some beaten eggs, eggplant, and the right seasonings could create the ever useful and delicious Tortang Talong?

Tortang Talong

This delicious, classic recipe is a perfect go-to in most Filipino households. This is because it is quick, easy, and best of all, absolutely tasty without sacrificing nutritional value. A massive part of this dish is the ingredient eggplant, which is rich in vitamins C, K and B6, among many other nutrients. This is also perfect with some rice and a couple dollops of ketchup.

Learn how to cook a delicious Tortang Talong, and do it in about less than 30 minutes:

Start out by taking your 4 pieces of Chinese eggplant and grilling them. Do this until the skin becomes nearly black in color, then let it cool. Once it is safe to touch, start peeling the skin off, and then set it aside. We’ll start creating the egg coating for our eggplant. 

Grilling Eggplant

In a bowl, crack open 2 raw eggs. Sprinkle 1 teaspoon of salt for added flavor onto the bowl, and then beat the mixture. Now take out your skinless eggplant from earlier, and put it on a flat surface. Grab your fork and flatten the eggplants. And then get your bowl with the beaten eggs and salt. Making sure you’ve coated it fully, dip your flattened eggplant inside the bowl. 

Peeled Eggplant

After this, you can go ahead and start prepping for the frying process. Heat up a pan, and then add 4 tablespoons of cooking oil inside. Then place your coated eggplants on the pan, and fry these. Keep an eye on them, and ensure that you get both sides fried nicely. This should take approximately 3 to 4 minutes per side with medium heat. 

Now you’ve got 4 servings of perfectly salty and tasty Tortang Talong! Feel free to share this filling and healthy dish with your family and friends.

Instead, it prevents umay or that feeling of getting sick of what you’re currently eating because it freshens up your palate. With this, it can go great with grilled recipes like barbecue or squid. But because of its flexible flavor, it can go with a wide range of savory dishes aside from those previously mentioned. 

The mix of colors you can see for this delicious side dish is built by tomatoes, onions, shrimp paste and more. They altogether create a unique, distinct taste that works perfectly with a great deal of Filipino recipes. 

Crispy Eggplant Fries

Your next best meryenda snack comes in the form of savory slices of eggplant coated in crunchy Panko breadcrumbs. These are light, but healthy. This is because you can find a great amount of vitamins in eggplant. As such, you might want to switch your French fries at home for this deliciously nutritious alternative that also uses very accessible ingredients. This is even easier to make than tortang talong.

Ingredients

  • 4 pieces Chinese eggplant
  • 2 pieces raw eggs
  • 1 teaspoon salt
  • 6 tablespoons cooking oil
US Customary – Metric

Instructions

  • Grill the eggplant until the color of skin turns almost black
  • Let the eggplant cool for a while then peel off the skin. Set aside.
  • Crack the eggs and place in a bowl
  • Add salt and beat
  • Place the eggplant on a flat surface and flatten using a fork.
  • Dip the flattened eggplant in the beaten egg mixture
  • Heat the pan and pour the cooking oil
  • Fry the eggplant (that was dipped in the beaten mixture). Makes sure that both sides are cooked. Frying time will take you about 3 to 4 minutes per side on medium heat.

    hello,
    … i’m just new here. and i watch how you prepare the tortang talong. it’s cool and konting suggestions lang kasi when when i do it my way. Nilalagyan ko poh ng mga spices like diced tomatoes, and diced onions and sometimes i add in some ground pork too. try nyo poh. It’s more inviting pag may spices. Thanks

    Wow, that’s a nice looking tortang talong. My mom would include that in our weekly diet as kids. I was a bad a kid though because I would just scrape the edges and leave off the middle part.

    Hi Kuya,
    I’ve learn a lot just by watching your cooking on youtube. You are really good cook. My husband loves your cook especially your Beef Pochero. He’s been to the Philippines before and tasted different food and he reckons your beef pochero is one of the best filipino food he ever tasted.
