Egg Drop Soup

It is the time of the year when hot soups goes in high demand. It is fall this time of the year here in Chicago, and the weather is getting colder as time passes by. Having warm or hot soup can make you feel warm and comfy – this is where this egg drop soup comes into the picture. I also created this blog post as a reply to a request that I got from Alex regarding an easy to make soup dish that can be made within 20 minutes.

Egg Drop Soup

This Egg Drop Soup Recipe can be made within 18 minutes (10 to 12 minutes if you really are in a hurry). I think that this is one of the best soups to prepare if you are busy and don’t have enough time to prepare your meal. Another good thing about egg drop soup is the fact that it does not cost much – yes, it is cheap – but delicious.

You can start to make your own egg drop soup quickly by following this recipe. If you have more time, you can also try doing egg rolls and fried rice to go with it.

Egg Drop Soup

Prep Time 5 minutes
Cook Time 18 minutes
Total Time 23 minutes

Ingredients

  • 3 cups chicken broth
  • 1 cup water
  • 2 eggs beaten
  • 1 teaspoon grated ginger
  • 1 1/2 tablespoon cornstarch
  • 2 tablespoons chopped green onion optional
  • Salt to taste

Instructions

  • Dilute the cornstarch in 1/4 cup water. Stir and mix well. Set aside.
  • Combine chicken broth and water in a cooking pot, Bring to a boil.
  • Add the grated ginger. Cook for 2 minutes.
  • Pour-in the beaten egg. Stir.
  • Add-in the cornstarch diluted in water. Continue to stir until the texture of the soup reaches your desired texture.
  • Add salt to taste.
  • Transfer to a serving bowl. Sprinkle green onions on top.
  • Serve. Share and enjoy!

    Great recipe,
    I truly enjoy a well put togather egg drop. But in my case I also enjoy incorporating a bit of meat. To the finished soup I add whole ( already cleaned and cooked ) baby whole baby clams, or as known in some parts as pisser clams. Be careful though as this adds a richness, I’ve often hurt myself with a second bowl ! Enjoy !

    I love this simple recipe. My 1 yr old baby is a picky eater, however, nung sinerve ko sa kanya etong soup na to, nagustuhan nya at andaming nahigop! Thank you sa recipe!

      1 piece of Knorr chicken cube is enough.

    Can this be made a couple of hours ahead of time and then reheated?

      Lee, yes this can be made ahead of time. However, make sure that you stir the mixture well while heating to preserve the texture.

    My dad made me this soup (but with extra servings of ginger) when I was a toddler. Now, living in Canada and having my own family, I serve this whenever someone is down with a cold/sore throat/ cough or whenever it is really cold outside. Some people enjoys it a lot, though my wife (who hates the taste of ginger) does not like as much but still forces herself to eat it due to the soothing effect the ginger has. She says having it in an egg drop form is a blessing and enables her to finish a bowl.

    I myself just LOVES this soup and would cook it for myself whenever I had the cravings for one. Thanks for posting this, I will try this version later.

    Sometimes though, replacing the scallions, if you want more crunch, I add chopped leek before serving or if you want less greens, adding chives would make it perfect without removing the taste of onions in the soup.

    i normally cook this using maggi magic sarap and without the ginger. It’s really a quick and easy recipe to make. I’ll try your version next time, i did wonder what i can use instead of maggi.
