Ginisang Sigarilyas is a classic dish with onion, garlic, and of course, the refreshing taste of crunchy sigarilyas or winged bean, this is a recipe that satisfies everything you’d want in your delicious Filipino ulam. It is sure to get you full, and won’t be a strain on your health even if you eat more than your usual serving of it.

This is because winged beans contain a good amount of protein, iron, and vitamins A and C. And another advantage we can’t forget about? They are absolutely delicious! For this dish, it is sat with ingredients of varying textures for that complementary taste, such as pork and cubed tomatoes.

As with most savory dishes, we will begin by heating up our oil. Pour 3 tablespoons of cooking oil into your pan, then add 3 cloves of chopped garlic, 1 onion that’s been chopped, and 1 tomato that’s been cubed. Sauté all of these together, and wait for the onion and tomato bits to soften. 

Once these ingredients are nice and tender, you can proceed to place 2 ounces of pork inside. Make sure that you’ve sliced them into thin pieces for this. Keep these ingredients cooking, and wait for your pork to become light brown in color. This should be your sign to put ½ cup of water in your pan. 

Ginisang Sigarilyas Recipe

Place a cover on top of the pan, and let this cook until your water evaporates fully. Here comes the exciting part of adding our hero ingredient. Place 8 ounces of sliced winged bean inside, and then sauté all of your ingredients for 3 minutes. 

Once you’re done with this, we’ll incorporate a few more ingredients for that lovely piquant taste. Add your preferred amount of fish sauce, as well as ¼ teaspoon of ground black pepper. Then you’re done! All you’ll need to complete this delicious dish is some freshly cooked, compact rice.

Ginisang Sigarilyas

Sauteed Winged Bean with Pork

Ingredients

  • 8 ounces winged bean sigarilyas, sliced
  • 2 ounces pork sliced into thin pieces
  • 1 piece tomato cubed
  • 1 piece onion chopped
  • 3 cloves garlic crushed
  • 3 tablespoons cooking oil
  • ¼ teaspoon ground black pepper
  • ½ cup water
  • Fish sauce to taste

Instructions

  • Heat oil in a pan.
  • Sauté garlic, onion and tomato.
  • Add pork once the onion and tomato soften. Continue cooking until the color of the pork turns light brown.
  • Pour water into the pan. Cover and continue cooking until the water completely evaporates.
  • Add winged beans. Saute for 3 minutes.
  • Season with fish sauce and ground black pepper.
  • Serve hot with warm rice. Share and enjoy!
