Pork Adobo in Pineapple Juice with Boiled Egg is what I had for lunch. I liked how this dish turned out. It is delicious! The pork is tender and flavorful. I also liked how fresh it tasted. Using pineapple juice in this recipe really made a difference.

What is Pork Adobo in Pineapple Juice?

Pork adobo has been a popular dish in the Philippines. Pork is cooked using the inadobo method, which is basically stewing in soy sauce and vinegar. Ingredients such as garlic, whole pepper corn and bay leaves are also utilized.

Think about this dish as regular pork adobo with the addition of pineapple juice and boiled eggs. There is not much new ingredients added, but the difference in flavor is noticeable in a good way.

I called it “mala-humba” in the the video below because it somewhat resembles Humba. It is a Filipino dish quite similar to adobo. It also uses pineapple juice, but it has all the bells and whistles. It can have salted black beans, dried banana blossoms, and even star anise. The variation depends on the region or province.

How to Cook Pork Adobo with Pineapple

Start by marinating the pork belly in pineapple juice and soy sauce. Put all three ingredients in a large bowl and mix all together. Marinate for at least 1 hour. Doing it longer is better. The meat will have the chance to absorb more marinade. It also gets tender because pineapple juice helps tenderize meat.

I also boil the eggs while the meat is being prepared. You can see my simple method of cooking perfectly boiled eggs below.

Cook the pork adobo by browning the garlic. Do this as if you are sauteeing any Filipino dish. Browned garlic provides a nice flavor to the dish. There is a difference between browned and burnt. Make sure to keep an eye on the garlic while cooking.

Add the marinated pork belly afterwards and then cook until light brown. The pineapple juice and soy sauce marinade is then poured into the pan. The pork needs to boiled for about an hour or until tender. For this reason, I add around 2 cups of water. It will help keep the liquid level in the pan optimal while the meat tenderize.

I prefer my adobo on the sweet side. Brown sugar or regular white sugar can be added to achieve it. The sugar is added last, just 3 minutes after pouring vinegar.

The amount of sauce in your adobo will depend on your own preference. There are days or occasions when I like my adobo dry. Sometimes I like it very saucy. Today, I want it just right. Cook longer (uncovered) to let the sauce evaporate until desired result is achieved. Add boiled eggs before serving.

How to Make Perfectly Boiled Eggs

Making perfectly boiled eggs is easier than you think. The result is a nice boiled egg without any rings on the outer side of the yolk.

I do this by combining eggs and water in a cooking pot, Make sure that the eggs are completely submerged in water. Turn the stove on and let the water boil. Once the water starts to boil rapidly, turn the heat off. Let the egg stay on the pot with water for exactly 10 minutes.

Discard the hot water. Stop the residual heat within the eggs to cook it further by pouring cold water on the pot. Add ice and let it stay for 10 minutes. Your eggs are now ready.

Ingredients

  • 3 lbs. pork belly sliced into cubes
  • 1 piece Knorr Pork Cube
  • 1 cup pineapple juice
  • 6 pieces eggs
  • 1 head garlic crushed
  • ½ cup soy sauce
  • 1 ½ teaspoons whole peppercorn
  • 6 pieces bay leaves dried
  • 3 tablespoons vinegar
  • 1 ½ tablespoons dark brown sugar
  • 2 cups water

Instructions

  • Combine pork, pineapple juice, and soy sauce in a bowl. Mix well. Cover the bowl and marinate the pork for at least 1 hour.
  • Start to boil the eggs by placing in a cooking pot with water. Turn on the heat and bring to a rapid boil. Turn the heat off when the water starts to boil rapidly. Let the egg stay submerged in hot water for 10 minutes. Discard the hot water and pour-in cold water right away to stop the eggs from cooking through residual heat. Add ice cubes and let it stay for 10 minutes. Peel and set aside.
  • Cook the pork adobo by heating oil in a cooking pot. Add crushed garlic. Cook until light brown.
  • Separate the marinade from the pork belly. Set it aside. Put pork in the pan. Cook until light to medium brown.
  • Pour marinade into the pan. Add water. Let the mixture boil.
  • Add Knorr Pork Cube, whole peppercorn, and dried bay leaves. Cover and cook between low to medium heat for 1 hour or until the pork is tender.
  • Pour vinegar and add brown sugar into the pan. Stir. Turn the heat off. You can add the peeled eggs or serve it separately with the pork adobo.
  • Share and enjoy!

Notes

Marinating the meat longer will produce the best result.
