- 1-2 onions large
- 1 quart of olive or other cooking oil
- 1 ¼ cup flour preferably all-purpose
- 1 tsp baking powder
- 1 tsp salt
- 1 whole egg
- 1 cup milk whole or low-fat
- Breadcrumbs as needed optional
Slice the ends off the onions and separate into thick layers.
While you prep your onion rings, heat oil in deep skillet or pot. When oil starts to ripple or bubble, it is ready for frying.
Mix together the flour, baking powder and salt in a bowl. Take individual onion rings and add the flour mixture, coating well. Place the powdered onion rings on a clean baking sheet.
Slowly stir in the egg and milk into the flour mixture. Whisk to form a batter. Take the floured onion rings and dip them in the batter until coated. Set aside on a rack.
Pour breadcrumbs on an open dish or plate. Roll the batter-coated onion rings in the breadcrumbs. Shake off any excess crumbs and drop onion rings into hot oil to fry. Cook until golden brown, season with a dash of salt and serve.
